Brighten up your bread basket with this Sunny Lemon Bread that's got a whole lot of lemon flavor baked right in, and on top! Yep, you get a double whammy of lemon flavor in this tasty bread, so you can enjoy the most out of the citrus you love.
What You'll Need
- 1 2/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 1/2 cup sugar, divided
- 2 eggs, beaten
- 1/2 cup milk
- 1/2 cup chopped walnuts
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
- In a small bowl, combine the flour, baking powder, and salt; set aside.
- In a large bowl, cream together the shortening and 1 cup sugar. Add the eggs. Then add the milk and dry ingredients and blend until smooth. Add walnuts and lemon zest.
- Pour mixture into loaf pan and bake about 1 hour or until a toothpick inserted in center comes out clean. Remove from oven.
- In a small bowl, mix the remaining sugar with the lemon juice. Pour over bread and serve warm.
