Peanut Butter-Banana Muffins

We put together 2 favorite flavors in one muffin and came up with Peanut Butter-Banana Muffins. Your family will be happy to find them in your bread basket!
What You'll Need
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 2 eggs
- 3/4 cup peanut butter
- 3 ripe bananas, mashed
- 1 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 cup chopped peanuts (optional)
What to Do
- Preheat oven to 350 degrees F. Coat a 12-cup muffin tin with cooking spray.
- In a large bowl, beat butter and sugar until creamy. Add eggs and beat until light and fluffy. Stir in peanut butter and bananas; mix well. Add flour and baking soda, mixing just enough to moisten. Spoon batter into muffin cups and sprinkle with nuts, if desired.
- Bake 20 to 22 minutes, or until a toothpick inserted in center comes out clean.

I wish I could edit my star rating and review on this site. I definitely would give this recipe 4 STARS , as the muffins were very moist, but lacked the taste of peanut butter. My husband and I agreed, we enjoyed these muffins.

Both my husband and I weren't able to taste the peanut butter. Just the taste of the banana in the muffin came through. With this recipe, I made 14 muffins.

Added 1/2 tsp. vanilla to the egg/sugar/butter mixture. Then added 1/2 cup chocolate chips at the end. It really upped the yum factor.

Made these for breakfast and they were kind of boring. I'm thinking it could have used some brown sugar or vanilla or something. Guess I was hoping for more of that peanut butter banana sandwich taste but the flavors kind of washed each other out. The chopped peanuts on top was a major distraction from the delicate flavors.

Oct.26,2012 I used natural chuncky peanut butter. Added chocolate chunks to last half of batter.

I made these yesterday and actually got 18 muffins. Used cupcake paper cups rather than greasing the tins. I simply put the bananas and peanut butter (crunchy) in the bowl and used the mixer to get them incorporated. No extra nut topping required. Timed about 25 minutes. They are yummy.
