Tall, Dark, and Handsome Cake

The coffee gives our Tall, Dark, and Handsome Chocolate Cake the right amount of kick that separates this from just an ordinary chocolate cake. This rich and creamy dessert will have everyone fighting over who gets the last piece.
What You'll Need
- 1 (18.25-ounce) package chocolate cake mix
- 1 cup brewed coffee
- 1/3 cup vegetable oil
- 3 eggs
- 2 (16-ounce) containers chocolate frosting
- 4 tablespoons caramel topping
- 8 chocolate-covered caramel candies, chopped
What to Do
- Preheat oven to 350 degrees F. Coat bottoms of 2 (8-inch) round cake pans with cooking spray.
- In a large bowl, beat cake mix, coffee, oil, and eggs until well mixed. Divide batter evenly between prepared pans.
- Bake 25 to 30 minutes, or until toothpick inserted in center of each comes out clean. Let cool 10 minutes, then remove to wire rack to cool completely.
- Slice each cake horizontally in half to make 4 layers. Place 1 cake layer on platter and spread one-quarter (1/2 a container) of chocolate frosting on top. Drizzle 1 tablespoon of caramel topping over frosting. Repeat with remaining cake layers and finish with frosting and caramel topping. Garnish with candy.

I have not been able to find 18.25oz cake mix lately. The layers in the new size cake mix are not thick enough to slice in half horizontally. Can you suggest where I can find the right size cake mix?

We contacted Pillsbury and Duncan Hines and they are switching over to the smaller boxes and getting away from the larger boxes. They assured us that the 15 oz. box makes the same as the larger box. We think that they must have increased the leavening agent in the mix to make it rise more. Just be sure to use an 8 inch pan and not a 9 inch pan. Enjoy!

I made this cake yesterday. It is the best cake I've ever made. I used a chocolate fudge flavor mix, brewed cuban coffee and canola oil. I also made my own frosting. Fantastic recipe, thank you for sharing.

Question - What is the best way to slice the cake horizontally? dental floss- serrated knife or something else. Any tips?

Great question! We would recommend using a sharp serrated knife. Place the cake on a flat surface, gently resting your hand on top of the cake and slowly slice through the cake. If you have a Lazy Susan, you can place the cake on that and let the plate do the work and rotate while you slice through. If you don't have a Lazy Susan, place the cake on a piece of parchment paper and then place that on the counter and the cake will easily rotate. Thank you for the question!

How very decadent! Just got a new (to us) stove and cannot wait to try this recipe. Chocolate has been, is and always be my favorite! AND Chocolate on Chocolate ... I simply cannot wait, I'll let you know as soon as I make it.

Question...are you able to substitute olive oil for the vegetable oil? If my Grandmother ever saw me making this, and it wasn't all from scratch, would be a lot of tisking going on, a stern word, words of encouragement. But, sorry Grandma, going to give this one a try!!!

If you typically substitute olive oil for vegetable oil, you can give it a shot. However, since we have not tried this substitution in the Test Kitchen, we can not guarantee the results. Thank you for the question and enjoy!
