Chicken and Broccoli Hotdish

What You'll Need
- 1 (10.75-ounce) can Cheddar cheese soup
- 1 1/2 cup sour cream
- 3/4 cup milk
- 1 1/2 cup shredded Cheddar cheese
- 1 (22-ounce) package frozen chicken breast strips, thawed, coarsely chopped
- 1 (14-ounce) package frozen broccoli florets, thawed
- 1 (20-ounce) package refrigerated shredded hash brown potatoes
- 3 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do

Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

In a large bowl, combine soup, sour cream, milk, and Cheddar cheese; mix well. Stir in chicken and broccoli and pour into prepared baking dish.

In a medium bowl, combine potatoes, butter, salt, and pepper. Evenly sprinkle over chicken mixture.
- Bake uncovered 55 to 60 minutes, or until heated through and golden brown.

Next time i would season the chicken before putting it in with the rest of the ingrediants. Also could use some onions. For a change I am going to try it with Italian sausage next time. When it is all put together salt and pepper the top before you put in the oven.

I went and bought chicken breast that I will cook to taste chop it up and add that. Im also substituting brocooli for cauliflower.............. ann

This sounds like one of those cheap budget meals that we will be able to utilize easily. I bet you could even use a can of cooked chicken or turkey. We purchase large quantities of one pound cans of turkey or chicken for cheap bulk prices and substitute them in recipes such as this one. We just drain them and use them in our cooking including casseroles, soups and even chili. Saving money is our best defense these days since we all must eat.

Cheap is not the correct word. No food is cheap these days. Less expensive is more like it. Buying in bulk is less expensive IF you have a large enough family or a large enough place to store the leftovers. To cook already cooked chicken for another hour seems to me a sure way of destroying all the flavor of the meat.

sounds great...but recipe does not say cooked chicken like the video does. which is it, cooked chicken or chicken breast strips and just cook them 55 to 60 minutes?

After watching video I see where she is coming from on whether to cook chicken or just put it in. He says in video to cook and not cook!! Which is it?

Sorry, dumb me! Looked at my package of frozen chicken strips, and it said "FROZEN FULLY COOKED", and remembered that all that is required to eat them is to just heat them up in stove or microwave, so just dump them in frozen and they will do fine as the casserole cooks!!
