Crunchy Pecan Chicken

Finely ground pecans make for a crispy coating for our Crunchy Pecan Chicken. This down-home southern-style chicken recipe is sure to be one of your all-time favorites.
What You'll Need
- 1 cup pecans, finely ground
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried basil
- lemon juice for dipping
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
What to Do
- In a large shallow dish, combine pecans, cheese, garlic salt and basil.
- Place lemon juice in another shallow dish; dip chicken in lemon juice, then coat with pecan mixtures.
- In a large nonstick skillet, heat oil until moderately hot. Add chicken; cook 3 to 5 minutes on each side or until golden and cooked through.
Notes
You can substitute turkey, veal or pork cutlets for the chicken and fresh lime juice for the lemon. Vary the flavor by using different varieties of nuts. To make it spicier, sprinkle on black pepper to taste.

I have used this recipe numerous times. So good! One modification, however: Replace lemon juice with Dijon mustard. Pecans stick very well to chicken. For a lower calorie meal: Bake the coated chicken in glass baking dish at 350 degrees for approx 45 min.
