Impossible Chicken 'n' Broccoli Pie

Impossible? How 'bout impossibly good and easy? This is another of those "throw-it-in-a-pie-plate-and-it-forms-its-own-crust" pies, which make it a pleasure for us.
What You'll Need
- 1 package (10 ounces) frozen chopped broccoli, thawed and well drained.
- 3 cups (12 ounces) shredded Cheddar cheese, divided
- 1 1/2 cup cut-up cooked chicken
- 2/3 cup chopped onion
- 1 1/3 cup milk
- 3 eggs
- 3/4 cup biscuit baking mix
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Preheat the oven to 400 degrees F.
- Grease a 10-inch deep-dish pie plate. Mix the broccoli, 2 cups of the cheese, chicken, and onion in the pie plate. In a medium-sized bowl, beat the milk, eggs, biscuit baking mix, salt, and pepper until smooth.
- Pour into the pie plate. Bake for 25 to 35 minutes, or until a knife inserted in the center comes out clean. Top with the remaining cheese and bake for 1 to 2 minutes longer, or just until cheese is melted. Let stand for 5 minutes before cutting.

I make these impossible dishes all the time and have found four eggs and 2 cups of milk works better than the other recipes I've seen. Pies, quiches, etc. Just FYI
