Mojo Chicken

Mojo is a marinade that is commonly used in Spanish and Caribbean cooking. In our recipe for Mojo Chicken we combine ingredients like garlic, onions, and citrus juice to create a flavorful, Cuban-inspired chicken dish that tastes phenomenal!
What You'll Need
- 3/4 cup grapefruit juice
- 3/4 cup orange juice
- 1/2 cup white vinegar
- 1 tablespoon lemon juice
- 1/2 a medium-sized onion, chopped
- 2 tablespoons minced garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon dried cilantro
- 2 teaspoons salt
- 6 boneless, skinless chicken breast halves (1 to 2 pounds total)
What to Do
- In a blender, combine all the ingredients except the chicken; blend until smooth. Reserve 1 cup of the mixture and chill.
- Place the chicken in a large glass dish and pour the remaining juice mixture over the top. Cover and marinate in the refrigerator for 2 to 3 hours. Remove the chicken from the marinade, discarding excess marinade, and cook in a large skillet over medium-high heat for 12 to 14 minutes, or until no pink remains and the juices run clear, turning halfway through the cooking.
- Meanwhile, in a small saucepan, cook the reserved 1 cup chilled marinade over medium-high heat for 3 to 4 minutes, or until boiling. Remove from the heat and pour over the cooked chicken. Serve immediately.

This sounds like it gets close to Asian Chicken Satay's. Of course I'd make it this way first but I also think I might add plain yogurt to the mixture.... marinate overnight then bake or grill off the flame and serve with peanut sauce.
