Quick Asian Chicken

When you want to stop by the grocery store on your way home and pick up only a few ingredients for a restaurant-quality Asian-style dinner, this is the perfect recipe. It sure is better than take-out!
What You'll Need
- 4 boneless, skinless chicken breast halves (about 1 pound total)
- 1/2 cup soy sauce
- Juice of one lemon
- 1 garlic clove, minced
- 2 tablespoons light brown sugar
What to Do
- Preheat the oven to 350 degrees F. Coat a 9" x 13" baking dish with nonstick cooking spray; arrange the chicken in the dish.
- In a small saucepan, heat the soy sauce, lemon juice, garlic, and brown sugar over low heat until the sugar is dissolved and well blended; pour over the chicken.
- Bake for 20 minutes, turn chicken over, and bake for 15 more minutes, or until no pink remains. Serve immediately.

To make spicier Asian recipes, I've been experimenting with red pepper flakes, as well as chili-infused oils for stir-frying. Check in your supermarket in the specialty food section for the fancy oils. They are more expensive, but I have been very satisfied with my outcomes. They also occasionally turn up at our local Big Lots, Ross and Marshall's in the food sections at more reasonable prices, where I was able to purchase some lemon-infused sunflower oil. If you have access to an Asian market, they may have recipe suggestions for you - also, Google "copy-cat Asian chicken recipes" and see what shows up.

I was disappointed that there was not a Sweet and Spicy receipe using cut up chicken breasts. I can get them prepared in restaurants but they will not share their reciept. Nancy
