Devilish Minty Cookies

You're going to have a devilishly good time eating these cookies. That's 'cause these easy cake mix cookies combine two flavors we love: mint and chocolate. Try one today, and see if you can resist reaching for another!
What You'll Need
- 1 (18.5-ounce) package devil's food cake mix
- 1/3 cup vegetable oil
- 2 eggs
- 3/4 cup coarsely chopped chocolate-covered thin mint candies
What to Do

Preheat oven to 350 degrees F. Coat a baking sheet with cooking spray.

In a large bowl, combine cake mix, oil, and eggs, and beat with an electric beater 3 to 4 minutes, until well blended. With a spoon, stir in chopped thin mints then drop by teaspoonfuls 2 inches apart onto prepared baking sheet.
- Bake 9 to 11 minutes, or until cookies are firm. Remove cookies to a wire rack to cool completely.

I have a cookie recipe using Duncan Hines cake mix and it calls for 1/2 cup oil and 1 tsp vanilla. They are delish.

Sorry to say I was very disappointed. The cookies are very dry and crumbly. I knew there wasn't enough liquid in the mix, and should have added more oil, but I didn't, hoping for the best. If I tried these again, I would use the amount of oil the cake mix called for.
