Pecan Coconut Rounds

With this combination of coconut, pecans, and honey, you're gonna hear lots of lip-smackin' "OOH it's so GOOD!!™

What You'll Need

  • 3 cups rolled oats
  • 1 cup flaked coconut
  • 1 cup pecan pieces
  • 1/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 1/3 cup firmly packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup (2 sticks) butter
  • 1/3 cup honey
  • 24 maraschino cherries, cut in half

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In large bowl, combine oats, coconut, pecans, cinnamon, and flour.
     
  3. In a medium-sized saucepan, combine remaining ingredients, except cherries, and bring to boil over medium heat. Pour honey mixture over flour mixture and blend until well mixed. Lightly grease 48 muffin pans, then fill each 1/3 full with batter. Top each with a cherry half and bake about 12 minutes until edges brown.
     
  4. Let cool slightly and remove from pans with a butter knife.

Notes

Sshh, my secret of using the muffin tins makes these cookies perfectly round. (No, they won't rise like regular muffins.)

what is rolled oats

dry oatmeal, not sure if they mean regular or quick cooking

Rolled oats are bigger than instant oats and take longer to cook. If you get oats in the cereal aisle at the store just don't choose the quick cook ones.

sounds so easy. can't believe no egg, no levening?? ok will follow recipe as directed

So if I want, I can just put cupcake liners on a cookie sheet and fill them if I don't have the pans and don't want to take so much time. I'll just remove the paper, right? Can bake a lot more this way since they will be close together.

sounds great except I don't have 4 muffin tins. Can the mini muffin tins? Or a combination of both sizes?

If you have one muffin pan, you can bake the cookies in batches. You don't need to bake them all at once. If you like, you can use mini-muffin tins, but they probably will take less time to bake. Thank you and enjoy!
