We found it! For all of you who thought there was no reason to make fruitcake, this recipe proves you wrong. Fruitcake is the foundation of these zesty spice cookies that are super for your holiday cookie platters.
What You'll Need
- 1/2 pound fruitcake
- 1 1/2 cup sugar
- 3/4 cup vegetable shortening
- 1/2 cup water
- 1/3 cup molasses
- 1 egg
- 1/2 cup raisins
- 3 cups all-purpose flour
- 1 tablespoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
What to Do
- Preheat oven to 375 degree F. Coat baking sheets with cooking spray.
- In a food processor, process the fruitcake; set aside.
- In a large bowl, with an electric beater on medium speed, cream sugar and shortening. Add water, molasses, egg, and fruitcake; mix well. Stir in raisins. Mix in flour, baking soda, cinnamon, and salt, then drop by teaspoonfuls onto baking sheets.
- Bake 11 to 12 minutes, or until bottoms are light golden. Remove to a wire rack to cool completely.
