Cheese Crepe Souffle

What You'll Need
- 2 (13-ounce) boxes frozen cheese blintzes (crepes), thawed
- 6 eggs
- 1 (16-ounce) container sour cream
- 1/2 cup sugar
- 1 1/2 teaspoon vanilla extract
- 2 tablespoons butter, melted
What to Do
- Preheat oven to 350 degrees F. Coat a 9-inch square glass baking dish with cooking spray. Lay out blintzes in prepared baking dish; set aside.
- In a large bowl, beat the eggs then beat in the sour cream, sugar, and vanilla. Pour mixture over blintzes then drizzle melted butter over top.
- Bake 1 hour, or until firm in center and golden. Let sit 5 minutes before serving.
