Mexican Coffee Cup Scramble

A healthy egg breakfast is just minutes away, when we use our microwave to speed up the cooking. This hearty Mexican Coffee Cup Scramble is sure to have your whole gang scrambling out of bed.
What You'll Need
- 1/2 cup frozen shredded hash browns
- 1 egg
- 1 tablespoon water
- 1 tablespoon black bean and corn salsa
- 1 tablespoon shredded Mexican cheese blend
What to Do

Coat a 12-ounce microwaveable coffee mug with cooking spray. Add hash browns and microwave on high 1 minute.

Add egg and water; beat until blended. Microwave on high 30 seconds; stir. Continue to microwave until egg is almost set, 15 to 30 seconds longer.
- Top with salsa and cheese and serve immediately.
Notes
- Microwave ovens vary, so adjust your cooking time as needed.
- Our Test Kitchen used ready-made refrigerated black bean and corn salsa; which is available in most markets. Of course, this recipe tastes great with any salsa or even without!

Love this! It is one of those recipes that you go "Why didn't I think of this?" Have made it a few times and today I am having it with fresh sprouts in place of the shredded has browns and topped with Mexican pepper jack cheese and pico. Yumm

could i use milk instead of water?

Sure! Please keep in mind that we have not tried the recipe with milk in our Test Kitchen, so we can not guarantee the results. However 1 tablespoon of milk should not make a big difference. Enjoy and thank you for your question!

Add whatever else you like! Try bacon bits, shredded cheese, pepperoni, chopped peppers, onions, or whatever...that's what I love about cooking you can almost always adapt to your own taste. : )

Be sure to cover the cup (vented plastic wrap or paper towel) as 'exploded' egg is no fun to clean up! Yes, a beaten egg will pop. I lightly scramble an egg in a sprayed custard cup, then nuke til set - perfect size for a toasted English muffin. Top with (or mix in before) shredded cheese, etc.
