What You'll Need
- 1/4 cup vegetable oil
- 1 cup cornflake crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 6 flounder fillets (about 2 pounds total)
- Nonstick cooking spray
What to Do
- Preheat the oven to 400 degree F. Place the oil in a shallow dish. In another shallow dish, combine the cornflake crumbs, cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper; mix well.
- Season the flounder fillets with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Dip the seasoned fillets in the oil then in the crumb mixture, coating completely. Place on large rimmed baking sheets that have been coated with nonstick cooking spray.
- Lightly coat the top of the fillets with nonstick cooking spray and bake for 12 to 15 minutes, or until the coating is golden and the fish flakes easily with a fork. Serve immediately.
Notes
You can buy cornflake crumbs or make your own by crushing cornflakes very fine.
