Cod Cakes

Your family will feel like they've been transported to the Cape for dinner! Not a bad trick, eh?
What You'll Need
- 2 cups steamed cod (about 1 pound fresh)
- 2 cups mashed potatoes
- 1 large onion, minced
- 1 egg, well beaten
- 1/2 cup bread crumbs
- 2 tablespoons mayonnaise
- 1/2 teaspoon salt
- 2 teaspoons seafood seasoning
- 1/2 teaspoon dried thyme
- 1/8 teaspoon pepper
- 1/4 teaspoon ground nutmeg
- 1 cup cornflake crumbs
What to Do
- Preheat the oven to 400°F.
- In a large bowl, break the fish apart and mash with the remaining ingredients, except the cornflake crumbs. Place the cornflake crumbs in a shallow dish.
- Form the fish into patties; coat the patties evenly on both sides with the crumbs. Place on a cookie sheet that has been coated with nonstick vegetable spray and bake for 15 minutes, or until warmed through.
Notes
You can use instant potato flakes instead of real mashed potatoes. They work just as well.
