Fish Cakes

How about a new way to make an old recipe even better than it was the first time. Fish Cakes are easy to make and they taste awesome.
What You'll Need
- 3/4 pound cooked white-fleshed fish fillets (cod or sole)
- 2 cups mashed potatoes
- 1 small onion, finely chopped
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 to 2 eggs, well beaten
- cornflake crumbs for dredging
What to Do
- Preheat oven to 400 degrees F. In a large bowl, break fish apart and mash. Mix in the potatoes and onion.
- Form mixture into patties; dip patties in the egg, then the cornflake crumbs. Place coated patties in a baking dish that has been coated with nonstick vegetable spray and bake for about 10 minutes.
Notes
Adding a little chopped fresh dill or parsley gives these a nice touch. And you can even use instant mashed potatoes here that makes it even easier.

I guess you mean 1 1/2 tsp salt? How about a little finely chopped celery? A little Old Bay?
