What You'll Need

  • 2 1/2 pounds (1/2-inch-thick) flounder fillets
  • 3 tablespoons lemon juice
  • 1/4 cup fine, dry breadcrumbs (regular or herb seasoned)
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons butter, cut into small pieces

What to Do

  1. Preheat the oven to 375 degrees. Arrange flounder in a buttered 9 x 13-inch baking dish drizzle with lemon juice.

  2. Combine breadcrumbs and cheese in a small bowl. Sprinkle breadcrumb mixture over flounder; dot with butter.

  3. Bake, uncovered, for 30 minutes or until fish flakes easily when tested with a fork. Serve immediately, using a slotted spatula.
