Flounder au Gratin

What You'll Need
- 2 1/2 pounds (1/2-inch-thick) flounder fillets
- 3 tablespoons lemon juice
- 1/4 cup fine, dry breadcrumbs (regular or herb seasoned)
- 1/4 cup grated Parmesan cheese
- 3 tablespoons butter, cut into small pieces
What to Do
- Preheat the oven to 375 degrees. Arrange flounder in a buttered 9 x 13-inch baking dish drizzle with lemon juice.
- Combine breadcrumbs and cheese in a small bowl. Sprinkle breadcrumb mixture over flounder; dot with butter.
- Bake, uncovered, for 30 minutes or until fish flakes easily when tested with a fork. Serve immediately, using a slotted spatula.
