For your family or for company, this Mediterranean-inspired grouper is perfect, and ready in under 15 minutes. Feta cheese, plum tomatoes, and Greek seasoning crown this fish with unbelievable flavor.
What You'll Need
- 4 (6-ounce) grouper fillets
- 1 tablespoon Greek seasoning
- 2 tablespoons butter
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 plum tomato, coarsely chopped
- 1/4 cup crumbled basil- and tomato-flavored feta cheese
What to Do
- Sprinkle both sides of fillets with seasoning. Melt butter in a large skillet over medium heat. Add fish, and cook 3 minutes; remove skillet from heat.
- Turn fish; top with spinach, tomato, and cheese. Return skillet to heat; cover and cook 3 minutes or until spinach is hot and fish flakes with a fork.
