Nutty Grilled Flounder

Awesome...that's the word that came to my lips after I first tasted this nutty grilled concoction. What do you think?
What You'll Need
- 2 cups finely chopped walnuts
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1 to 1½ pounds flounder fillets
- 1/4 cup ( stick) melted butter or margarine
What to Do
- Preheat the grill to medium-high heat.
- In a medium-sized bowl, combine the walnuts, salt, and cayenne pepper; mix well.
- Rinse the fish with cold water and pat dry with a paper towel.
- Place the melted butter in a small bowl; dip the flounder into the butter, then the nut mixture, completely coating the fish. Place the coated fish in a hinged grill basket that has been coated with nonstick vegetable spray.
- Grill the fish for 5 to 7 minutes, until the fish flakes easily with a fork and is cooked through, turning occasionally.
Notes
You can "fancy" this up by using pecans instead of walnuts...or maybe you'd prefer almonds or peanuts? Whatever's your fancy!
