Oven-"Fried" Fish

So crispy and crunchy, they'll swear it's fried and then they'll swear it's delicious - which, of course, it is!
What You'll Need
- 2 pounds cod or haddock fillets
- 1 egg, beaten
- 1 tablespoon vegetable oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried dillweed
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1 cup fine cornflake crumbs
What to Do

Preheat oven to 400 degrees F. Coat a baking pan with cooking spray. Cut each fillet into 3-inch-wide pieces.

In a shallow dish, combine egg, oil, salt, pepper, dill-weed, paprika, and garlic powder. Place cornflake crumbs in a separate shallow dish.
- Dip fish pieces into egg mixture, then in cornflakes. Place on prepared baking pan and bake 20 to 25 minutes, or until fish flakes easily with a fork.
