Have you ever paired together nuts and fish before? If you haven't, you're in for a real treat! Our easy seafood recipe for Pecan Trout is a great way to mix up your usual dinner routine. Nuts and fish are full of good-for-you vitamins and minerals making this recipe a healthy dinner you won't be able to pass up. Best of all, it's ready in under 20 minutes, so you have even more time to enjoy your evening.

What You'll Need

  • 1/3 cup chopped pecans
  • 10 saltine crackers
  • 1 clove garlic, chopped
  • 1/4 teaspoon salt
  • 3 tablespoons fat-free milk
  • 2 (6-ounce) trout fillets
  • Cooking spray
  • 2 teaspoons canola oil
  • Lemon wedges (optional)

What to Do

  1. Process first 4 ingredients in a food processor until finely ground. Place cracker mixture in a shallow dish.

  2. Place milk in a separate shallow dish. Dip fillets in milk; dredge in cracker mixture. Coat fillets with cooking spray.

  3. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add 1 fillet; cook 2 to 3 minutes on each side or until fish flakes easily with a fork. Remove fillet from pan, and keep warm. Repeat procedure with remaining 1 teaspoon oil and fillet. Serve with lemon wedges, if desired.

Notes

It's best to cook fresh fish the same day you buy it-or catch it. If that's not possible, store it wrapped in plastic in the coldest part of your fridge up to 2 days. Fish can also be frozen up to 3 months in an airtight wrap.
