Pepper and Garlic Flounder

You'll net a lot of applause with this flavorful fish dinner?a four-ingredient marinade and some peppercorns are all it takes for a simple entrée.
What You'll Need
- 6 (4-ounce) flounder fillets
- 1/4 cup soy sauce
- 2 tablespoons minced garlic
- 1 1/2 tablespoon lemon juice
- 2 teaspoons sugar
- 1 tablespoon mixed peppercorns, crushed
What to Do
- Place fillets in a shallow baking dish. Combine soy sauce and next 3 ingredients; pour over fillets. Cover and marinate in refrigerator 30 minutes.
- Preheat the oven to Broil. Remove fillets from marinade; discard marinade. Sprinkle fillets evenly with peppercorns, pressing firmly so that pepper adheres to fillets.
- Place fillets on a rack of broiler pan coated with nonstick cooking spray. Broil 5-1/2 inches from heat (with electric over door partially opened) 8 to 10 minutes or until fish flakes easily when tested with a fork.
