Spicy Grouper Fillets

This mild fish gets a punch of flavor from ground red pepper and garlic-infused olive oil.
What You'll Need
- 3 tablespoons all-purpose flour
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon salt
- 4 (6-ounce) grouper fillets (1-inch-thick)
- 1 teaspoon olive oil
- 1 clove garlic, crushed
- Lemon wedges (optional)
What to Do
- Combine first 3 ingredients in a large resealable plastic bag. Add fish; turn gently to coat.
- Heat olive oil in a large nonstick skillet over medium heat. Add crushed garlic, and sauté 30 seconds; discard garlic. Add fish; cook 8 to 9 minutes on each side or until fish flakes easily with a fork. Serve with lemon wedges, if desired.
