Tomato Cream Crusted Fish

Try this Tomato Cream-Crusted Fish for a change of pace from the ordinary baked-on toppings. It's truly the cream of the crop!
What You'll Need
- 1 (3-ounce) package cream cheese, softened
- 2 tablespoons tomato paste
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 pounds fresh or frozen white-fleshed fish fillets, like cod, haddock, or whiting, thawed if frozen
What to Do
- Preheat the oven to 350 degree F. In a small bowl, combine all the ingredients except the fish; mix well.
- Place the fish on a rimmed baking sheet that has been coated with nonstick cooking spray.
- Spread the cream cheese mixture evenly over the top of the fish and bake for 18 to 20 minutes, or until the fish flakes easily with a fork.
Notes
For more cheese flavor, add 1 to 2 tablespoons grated Parmesan cheese to the cream cheese mixture.
