Trout Parmigiana

You've had Veal Parmigiana topped with rich tomato sauce and melted mozzarella cheese? Well, here's the same idea with trout. Boy, will you be amazed by the results!
What You'll Need
- 4 trout fillets (4 ounces each)
- 1/4 cup spaghetti sauce
- 1/4 cup shredded mozzarella cheese
- 1 teaspoon grated Parmesan cheese
What to Do
- Preheat the grill to medium-high heat.
- Rinse the fish with cold water and pat dry with a paper towel. Roll up the trout and place each roll on end in a disposable aluminum muffin cup.
- Top each with a tablespoon of spaghetti sauce, a tablespoon of mozzarella cheese, and 1/4 teaspoon Parmesan cheese.
- Place the muffin cups on the grill; close the cover and cook for 10 to 12 minutes, until the fish is hot and bubbling, and is cooked through in the center.
Notes
Since most of us have bottled spaghetti sauce on hand, why not change the flavor of this dish by using different types of spaghetti sauce? Go with zesty spices one time, garden veggies another, and hearty it up with your own homemade sauce or a homemade style bottled sauce another time.
