Tuna in Tomato Anchovy Sauce

Tuna is one of the meatiest types of fish, so this is really a super way to prepare it to make the most of its tempting taste and texture.
What You'll Need
- 1/4 cup all-purpose flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 4 tuna steaks (about 1½ pounds total), 1 inch thick
- 1 tablespoon olive oil
- 1/2 cup water
- 1/2 cup dry white wine
- 1 tablespoon tomato paste
- 1 teaspoon anchovy paste
- 1/4 teaspoon black pepper
What to Do
- In a shallow dish, combine the flour, onion powder, and garlic powder. Coat the tuna on all sides with the flour mixture and set aside on a platter.
- In a large skillet, heat the oil over medium-high heat and cook the fish for 2 to 3 minutes per side, or until golden. Remove the fish to a covered platter to keep warm.
- Add the water, wine, tomato paste, anchovy paste, and pepper to the skillet; stir until smooth.
- Return the tuna to the skillet and cook for 4 to 5 minutes, or until the tuna is cooked to desired doneness. Spoon the sauce over the tuna and serve.
