Our Million Dollar Rice Salad is a sweet and refreshing addition to any meal. Fresh fruit, chopped nuts, and cream cheese make this dessert the perfect combination of creamy and crunchy!
What You'll Need
- 8 ounces cream cheese, softened
- 3 tablespoons sugar
- 2 cups cooled cooked rice
- 1 cup red grapes, cut in half
- 1/2 cup chopped maraschino cherries
- 1 banana, thinly sliced
- 1 (12-ounce) container frozen whipped topping, thawed
- 1/2 cup chopped walnuts
What to Do
- In a large bowl, combine cream cheese and sugar until smooth. Add rice, grapes, cherries, and banana; mix well. Fold in whipped topping and nuts.
- Chill 1 hour, then serve.

Those comparing this dish to others such as glorified rice seem to be missing the point. It's supposed to be a different alternative. Daughter calls glorified rice "Old people's dessert" and wouldn't try this at first. She loves the texture and flavors. I did use Jasmine rice and sprinkled fruit mixture with fruit fresh to prevent banana from turning brown. Wife remembers her grandmother's rice when enjoying this but also prefers this dish for same reasons as our daughter.

I can't wait to make this salad. It reminds me of the ambrosia and Watergate salads I love to make during the holidays. It does sound like a fruity rice pudding. I want to try it for a family get together for Christmas. I'm sure they will enjoy it.

I doubled the recipe to take to a pot luck. It was very tasty and the bowl was empty when we left However, I thought it was too thick and not creamy enough. If I have to double again, instead of doubling rice I would only add 1 additional cup. I'm going to make the recipe as printed to see if it is creamer when making a single batch.

I'm sorry BUT my rice pudding recipe is rice cooked in milk with raisins , cinnamon, eggs, vanilla, and sugar. There is no cream cheese or whipped cream in it??

That sounds delicious! We have a similar recipe like that as well called Classic Rice Pudding. The recipe above for Million Dollar Rice Salad is not a pudding, but a different type of dessert with rice. Just a different option for you! Thank your for your comments!

Yes pudding rice. Not like long or short grain. It is more flat than regular rice. It is widely available across the UK. They take rice pudding very seriously there !

Grannyblu..That is rice pudding. A favorite in the south. It is delicious. Try it. You can buy it in the Jello cups in the grocery store. My husband loves them.

Pudding rice???? Never heard of "pudding rice" There is short grain medium grain and long grain and a few prefer short grain for puddings saying it has more starch and makes the pudding thicker but I do not like short grain at all ...way too "gluey" for my tastes I use long grain rice for alll my recipes including rice puddings Always wash your rice in cold water till water runs clear before using Cooking your rice in milk or water for this recipe ,is up to you again personal preference but not necessary to cook the rice in milk ...water is just fine!
