Mac and Cheese Cups

Muffin tin cups take the worry out of dishing up just the right serving size when we prepare our creamy homemade macaroni and cheese. These Mac and Cheese Cups are sure to make things easy for you.
What You'll Need
- 12 round butter-flavored crackers
- 1 (8-ounce) package elbow macaroni
- 1 (10.75-ounce) can condensed Cheddar cheese soup
- 1/2 cup milk
- 3 cups shredded sharp Cheddar cheese, reserving 1/4 cup for garnish
- 1 egg, lightly beaten
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray.
- Place a cracker in the bottom of each muffin cup and set aside.
- Cook macaroni according to package directions; drain and return to pot. Stir in remaining ingredients, except reserved cheese. Evenly spoon mixture into muffin cups and sprinkle with reserved cheese.
- Bake 15 to 18 minutes, or until heated through. Let sit 4 to 5 minutes then remove from muffin tin by running a knife along the edges to loosen. Serve immediately.

I made these for a group of 4 year old girls and they loved them! I made them in mini-muffin tins, so I left out the crackers on the bottom. The kids loved them because they could pick them up and the moms loved them because they were delicious! Will definitely make this one again!

I'm going to try making Mac and Chesse cups but I'm also going to add a can of tuna or maybe some rotisserie chicken in the recipie. Going to serve it with a side salad and the Sour Cream Muffins.

It would be nice, if you added a feature, so that we could select and print comments with the recipes. Some of the reader comments make the recipes easier and/or better.

I agree there are some great suggestions in the comments. I just copy and paste the recipe and the comments I want to save and paste to Word and print.

We keep Campbell's cheddar cheese soup on the shelf all the time thanks for a different way to uses it... We make cheese fondue with it...most of the time..

Here is an easy recipe for homemade cheese soup... Creamy Cheddar Cheese Soup Ingredients 1/4 cup butter 1 onion, chopped 1/4 cup all-purpose flour 3 cups chicken broth 3 cups milk 1 pound shredded Cheddar cheese Directions 1. In a 3 quart saucepan over medium-high heat, melt butter or margarine. Add onion and cook until tender, about 5 minutes. Stir in flour and cook until flour has blended with onion mixture. 2. Add chicken broth and cook, stirring constantly, until mixture is slightly thickened. Add milk and heat just to boiling, stirring constantly. 3. In covered blender at medium speed, blend about 1/4 of soup mixture at a time until smooth. Return to saucepan and, over medium heat, heat just to boiling. Remove from heat. 4. With wire whisk or slotted spoon, stir in cheese until melted. If cheese does not melt completely, cook over very low heat about 1 minute, stirring constantly.
