What You'll Need
- 1 pound small pasta shells
- 3 cups cooked chicken, diced
- 2 cups frozen peas, thawed
- 2 scallions, sliced
- 1/2 red bell pepper, chopped
- 1 cup mayonnaise
- 3/4 cup chili sauce
- 1/4 cup lemon juice
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- In a large pot of boiling salted water, cook pasta to desired doneness; drain.
- In a medium bowl, toss together pasta, chicken, peas, scallions, and bell pepper.
- In a food processor or blender, combine mayonnaise, chili sauce, lemon juice, parsley, salt, and pepper until smooth. Pour dressing over pasta salad and toss until evenly coated. Refrigerate until ready to serve.
