Easy Strawberry Pie

Prepared pie crusts make it a snap to whip up homemade pies. This Easy Strawberry Pie recipe features fresh strawberries, which are sure to make your gang cheer!
What You'll Need
- 1 cup sugar
- 1 cup water
- 3 tablespoons cornstarch
- 1/4 cup (1 package) strawberry gelatin
- 5 cups fresh strawberries, halved
- 1 (9-inch) baked pie crust
- Whipped cream or frozen whipped topping, thawed (optional)
What to Do
- In a medium saucepan over medium heat, bring sugar, water, and cornstarch to a boil; cook 1 minute or until thickened, stirring constantly.
- Stir in gelatin until dissolved. Remove from heat; let cool 8-10 minutes.
- Place strawberries in a large bowl and pour glaze over them. Toss gently until evenly coated, then spoon evenly into pie crust. Cover and chill 4 hours. Serve with whipped cream, if desired.

Question Could I just use a small box of strawberry jello and leave out the 1 cup of sugar? Seems like both would make it too sweet?

If I am making a 10 inch pie can I use the whole 4 oz. box of Jell-O and would it make a difference if I use sugar free Jell-O ?

Yes, if you are making a 10-inch pie you can use a whole 4-ounce box of Jell-O. It also will not make any difference whether you use regular or sugar-free. Enjoy! :)

I have made this recipe for many years. I found it in a church cookbook. Yes, it is so easy and wonderful during the strawberry season. I mix the sugar and cornstarch with a whisk before adding the water which results in NO lumps. I use sugar free gelatin and a graham cracker crust. Easy.

I made this for father's day..my only problem was that the corn starch lumped a bit when I added it. Did I do something wrong? This was very delicious and so easy! Thank you.

We're so glad you loved the pie! Concerning your question, try using a whisk when you add the cornstarch. A whisk will help it mix together better.Sometimes, the problem could also be due to old cornstarch.

Next time try mixing the cornstarch with the sugar, then add the water and stir well before heating.

Hi janaa! No, this is not the same. A (4) 1/2 cup serving size box of Jello brand gelatin is approximately 1/2 cup. For this recipe you only need 1/4 cup. Thank you for your question!
