Chipotle-Cinnamon Pork Chops

This refreshing pineapple salsa tames the punch of the chipotle chili powder. The salsa is also a good accompaniment to grilled fish.
What You'll Need
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1 tablespoon plus 2 teaspoons olive oil, divided
- 4 (1-inch-thick) boneless center-cut loin pork chops
- 1 1/2 cup finely chopped fresh pineapple
- 2 tablespoons chopped fresh mint
- 1 tablespoon lemon juice
- 2 teaspoons sugar
- 1/4 teaspoon crushed red pepper
What to Do
- Combine chili powder, cinnamon, salt, and 2 teaspoons oil; stir to make a paste. Rub paste over pork chops; let stand while making salsa.
- Combine pineapple and remaining 4 ingredients; toss well, and set aside.
- Heat remaining 1 tablespoon oil in a large nonstick skillet over medium heat. Add chops, and cook 7 to 8 minutes on each side or until done. Serve chops with salsa.
