What You'll Need

  • 3 1/3 cups water
  • 1 1/2 cup long-grain or whole-grain rice, uncooked
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 large tomatoes, cut into chunks
  • 2 scallions, sliced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ranch salad dressing

What to Do

  1. In a large saucepan over high heat, bring water to a boil. Add rice, then reduce heat to low and simmer 20 minutes, or until water is absorbed; set aside.
     
  2. In a large skillet over medium heat, heat oil; saute garlic 2 to 3 minutes. Add tomatoes and saute 1 to 2 more minutes.
     
  3. Add rice, scallions, salt, and pepper; mix well. Add salad dressing and mix until heated through. Serve immediately.

Notes

  • If you want this a bit more creamy, add an additional 1/4 cup ranch dressing. (You know, the secret ingredient!) And you can try any of the ranch dressing flavors like Caesar ranch, peppercorn ranch, or others -- they'll all work.

Good basic recipe add a chicken or beef cube and some grren peppernix the bottled dressing

Dawn with a bunch of numbers after said "Rice requires steam to cook". I beg to differ. I cook my rice in a large amount of water to the doneness I like then drain off the water just like macaroni. It never burns, sticks or lumps. You just have to drain off all the water. Foolproof plan.

Meatandtaters cites an excellent method for cooking rice, with a lot of excess liquid. No worries with burning, or running out of water. When the rice grains reach the tenderness you want, just drain well.

I use brown rice, as we prefer the flavor. This is a good side dish, attractive, easy.; the dill and ranch is great together.

Very good. I used 2 C. of rice & 2 cup of water. It made LeRoy & I 3 meals.

First I made my white rice in a rice cooker, then followed the directions ;D

On the ranch salad dressing is that the bottle salad dressing or the dry mix!

Mr. Food; thank you again for all your tasty recipes! I will try this one soon. And I know this is a bit late, but in reference to (Fay Cushwa/comment dated 12/17/10) ............. if the word underlined in the recipe doesn't print out for you, perhaps you don't have "colored ink" in your printer, or it needs replaced. I print the word in myself with a ink pen. Just keep recipe you printed off the computer opened to the recipe, and scan down where words are not on your printed page ........... then fill them in. Are we to cover the rice while it is simmering?

I would think you would cover pot, When I make rice of any kind I always cover and put on simmier. So if I make this recipe I will cover.

I would suggest following the package instructions for cooking the rice. Rice requires steam to cook and must be covered. Cover and do not lift the lid at any time during the 20 minutes or you'll get undercooked rice.
