Rice Primavera

We've taken the concept of a traditional, Italian, "pasta primavera" and transformed it into a rice dish that features all the same great springtime veggies. Our recipe for Rice Primavera is creamy, fresh, and tasty!
What You'll Need
- 2 teaspoons olive oil
- 1 clove garlic, minced
- 2 cups broccoli florets
- 1 cup sliced zucchini
- 1 cup sliced mushrooms
- 1 tomato, seeded and chopped
- 1/4 cup chopped fresh parsley
- 1/3 cup mayonnaise
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon pepper
- 3 cups cooked rice
- 1/2 teaspoon salt
What to Do
- In a large skillet over medium-high heat, heat oil; saute garlic, then add broccoli, zucchini, and mushrooms and cook 3 to 5 minutes, or until almost crisp-tender. Add tomato and parsley and cook 1 more minute. Remove vegetables and set aside.
- Add mayonnaise to the same skillet; stir in milk, cheese, salt, and pepper. Cook over medium heat, stirring until smooth. Add rice; toss to coat.
- Return vegetables to skillet and cook just until heated through. Serve immediately.
