Granola Brittle

When Howard travels, he likes to bring a bag of fresh granola with him. That's where the idea for this tasty Granola Brittle came from. It's a combination of tasty oats and some protein-packed seeds that tastes well on it's own as snack or on top of your favorite yogurt for breakfast!
What You'll Need
- 2 1/2 cups rolled oats
- 1 cup slivered almonds
- 3/4 cup chopped walnuts
- 1/2 cup roasted sunflower seeds
- 1/2 cup sesame seeds
- 1 cup dried cranberries
- 1/2 cup honey
- 1/2 cup canola oil
- 2 teaspoons vanilla extract
- 2/3 cup light brown sugar
What to Do
- Preheat oven to 350 degrees F. Line a rimmed baking sheet with foil and coat lightly with cooking spray.
- In a large bowl, combine oats, almonds, walnuts, sunflower seeds, sesame seeds, and cranberries.
- In a saucepan over low heat, combine honey, oil, vanilla, and brown sugar, and bring to a boil. Remove from heat and pour over nut mixture; stir until evenly coated. Spread mixture evenly on prepared baking sheet.
- Bake 40 to 45 minutes or until browned. While still a little warm, break apart and cool completely. Store in an airtight container.
