Here's a fresh way to bring those summer flavors into your kitchen! With our recipe for Skillet Summer Vegetables you can whip up an easy side dish that has all those summer-fresh vegetables you love, like zucchini and tomatoes. This side dish will really make your dinner spread wonderful!

What You'll Need

  • 3 tablespoons vegetable oil
  • 3 cloves garlic, finely chopped
  • 1 onion, coarsely chopped
  • 3 tomatoes, seeded and coarsely chopped
  • 2 zucchini, sliced into rounds
  • 2 summer squash, sliced into rounds
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

What to Do

  1. In a large deep skillet over medium heat, heat oil; saute garlic and onion 3 minutes. Add tomatoes and continue cooking 5 minutes, or until tomatoes soften.
     
  2. Add remaining ingredients and cook 10 to 15 more minutes, or until zucchini and squash are soft. Serve immediately.
     

Note

  • If you have any on hand, fresh basil and oregano make this dish taste even fresher!

I made this last night and added cooked thin spaghetti at the very end, loosened it with a bit of pasta water, and topped with a sprinkle of pecorino romano cheese. Absolutely delicious!

There's just something about the combination of cooked tomatoes and zucchini that always seems to work great together. The cooking gives them such a great texture and brings out the sweetness of the vegetables. And since this is full of nutritious veggies, you don't have to feel guilty about going back for seconds! When serving with pasta, I might chop the veggies up smaller to make it easier to toss evenly together, and use fresh basil leaves at the end.

Delicious way to enjoy summer's bounty! Even my veggie skeptics loved it!

Omitted the salt, reduced the basil, and reduce the tomatoes to two. My wife and i loved it.

I made this last night and it was soooo good! I typically make a new recipe the first time as stated but did sub olive oil for the vegetable oil. The dish was simply delicious and had excellent flavor. Definitely a keeper and can't wait til summer for an abundance of zucchini and tomatoes!

This is good with some cooked elbow macaroni tossed in also!

I saute the zucchini right along with onion & garlic usually simmer with the tomatoes about 30 minutes Everything comes out fully cooked & soft

Delicious recipe especially for anyone who is not that fond of zucchini.

I have never been a big zucchini fan. A friend gave me some home grown zucchini so I decided to try this recipe. It was DELICIOUS!!! I will definately be using this recipe again. (I did let it cook a little longer than the recipe calls for because I like my veggies soft).

When I make this I top it with Parmesan Cheese. Gives it a richer taste. I usually just use tomatoes, onions and zucchini. Also, zucchini needs to cook longer. I was making cabbage rolls and had some of this left over which I ground up and added to the meat mixture.

I do this with fresh green beans also. Sometimes I use dry italian salad dressing mix for the spices and salt. Super easy and quick!!
