What You'll Need

  • 1 1/2 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (1/2 stick) butter, melted
  • 1 egg
  • 3 apples, peeled, cored, and coarsely chopped
  • TOPPING
  • 1/4 cup packed light brown sugar
  • 1/2 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9-inch round cake pan with cooking spray.
     
  2. In a large bowl, beat flour, granulated sugar, baking powder, salt, 1/4 cup butter, and the egg until well mixed and crumbly. Stir in apples, then spread batter into cake pan (mixture will be crumbly). 
     
  3. In a small bowl, combine Topping ingredients; mix well and sprinkle evenly over batter.
     
  4. Bake 50 to 55 minutes, or until a toothpick inserted in center comes out clean. Serve warm or allow to cool, then cover until ready to serve. 

Notes

  • Fresh apples are available year-round, but if you don't have any on hand you can always use canned apples. Just be sure to drain them well and cut them into 1/2-inch chunks.

Good recipe I added about 2 Tablespoons oil and about 2 Tablespoons milk also kicked up the spice by adding a good pinch of allspice and a pinch of cloves Of course I used walnuts instead of pecans .. walnuts and apples seem to go together so much better

Yes- this can be made in a 9-inch spring foam pan.

Can I use my canned apples instead of raw and how much to use?

Yes - You can used canned apples, drained and cut into 1/2 inch chunks. One can should do the trick. :)

Why can't I copy the picture that goes with this cake?

I just looked at my existing recipes and found I had one just like this except for one ingredients. Yours said 3 apples. My old one says two. I am glad to add an additional apple. This is the most delicious cake than you could ever imagine. It only makes a single layer. So if you make this, make two. One for yourself and another for whomever.

Easy, quick tasty enough to make again but next time less chopper nuts -- was just a bit too much for us.

why could I not add this to my recipe box?

I made a few minor adjustments. I added an extra apple, and about a teaspoon of cinnamon, to the batter. For the topping, I subtracted the nuts, and added a bit more butter. Overall, this cake is one of the best I have ever tasted! I was pleasantly surprised that the apples were enough to moisten the cake, since the batter was very crumbly and dry. I think there could be a bit more of the topping, however, it is sweet enough, that it made the cake tasty, despite not covering the entire top surface. I will definitely make this again! :)

The batter did seem a little dry so I chopped up another apple and that seemed to help. Didn't use nuts in topping but used a spoonful of oats. It turned out good. Kids ate it with ice cream and loved it. Will make again.

This recipe is perfect just the way it is! The extra moisture you think you need is in the apples. Fabulous and very delicious!

Coffee cake is cake to enjoy with coffee...not cake that is made with coffee!

You do not need additional liquid. Once all the ingredients arr mixed and placed in the pan it all comes together when baked! This is am awesome recipe... just follow as written :)

my so call batter just looks like a crumble mess. it is not a batter just bits n pieces of stiff dough. i think i need to put some moisture in it. maybe a little milk

I made it and used softened butter to sprinkle on it still melted as I knew it would. If I make again I probably will use a crumb topping made with flour, butter br sugar as is cake was okay but not great

ayou could use Streussel topping, Just use flour, brown sugar, cinnamon, pecans or (favorite nut) & melted butter. mix all dry ingred. then drizzel melted butter over it as you crumble it (mix) w hand. When well mixed and crumbly spread over cake.Splenda can be used in topping.

I know what she is ta I know what she is asking about do you melt the butter before you put it into the cinnamon topping. No just soften it. King

Ok this might sound like a dumb question to some but I am not a novice in the kitchen so here goes...in the topping should the butter be melted or just soft? when I melted it it turned to liquid of course and not really able to sprinkle more like pour so I tried softening the butter and doing it that way which did sprinkle...i would like to know the correct way though..thank you

can you use applsause insted of chunks of apple? if so how much applesause?

Applesauce would add liquid to the recipe, apple chunks add texture. So, applesauce would not be a substitute for apples. Thank you for your question and enjoy!

Cassiemae, Your question makes absolutely no sense but I'll go out on a limb here and say no the butter from the topping does not sink into the cake. (Sheesh!)

On second thought just serve in the same foil pan.

if I want to take this to a social, how can it be inverted onto a disposible plate? Wouldn't it loose the topping

Use a foil cake pan which can be purchased in any market or $ store. After your cake is cooled cut the cake pan down the sides with a kitchen or any sharp scissors a & transfer to your serving plate. I've been doing this for yrs. then just recycle your foil pan.

Just serve in a foil pan that can be purchased at the $ store.

To Make this a healthier version I used 1c Wheat Pastry Flour 1/2c Almond flour, 1/2c honey, 1/2 brwn sugar, 1 1/2tsp baking power, 1/4 tsp salt, 1/4c applesauce, 1/4c canola oil, 1 whole egg, 1 egg white, and 2c blueberries. Topping 1/4c brown sugar, 1/2c sliced almond, 1/4c steel cut oats, 1tsp cinnamon & 2Tbl canola oil. I folded the blueberries after mixing all ingredients instead of adding them. The batter is soft, cake like. But the taste was excellent. Will make this again
