What You'll Need
- 1 pound sliced fresh white mushrooms
- 1 scallion, thinly sliced
- 1 cup shredded Cheddar cheese
- 1 1/2 cup dry bread crumbs
- 1 egg
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- Vegetable oil for frying
What to Do
- In a large bowl, combine all ingredients except oil; mix well. Shape into 8 equal-sized patties by squeezing mixture together.
- Heat 1/2 inch oil in a large skillet over medium-high heat and cook croquettes for about 15 minutes, or until browned on both sides.
- Drain on a paper towel-lined platter.
