Scallion Egg Roll

What You'll Need
- 6 eggs
- 1 1/2 cup milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 5 scallions, thinly sliced
- 1 cup (4-ounces) shredded Cheddar cheese
What to Do

Preheat oven to 350 degrees F. Line a 10- x 15-inch rimmed baking sheet with aluminum foil, then coat foil with cooking spray.

In a large bowl, whisk together eggs, milk, flour, salt, and pepper 2 to 3 minutes, or until mixture is smooth. Stir in scallions, then pour mixture onto baking sheet.

Bake 12 to 15 minutes, or until set. Sprinkle evenly with cheese, then bake 2 to 3 minutes, or until cheese is melted.
- Allow to cool 5 minutes, then carefully lift aluminum foil (eggs and all) and remove it from baking sheet. Starting from a smaller end, roll up eggs jellyroll style, carefully releasing them from aluminum foil as you roll. Slice into 1-inch pieces and serve.
