Mediterranean Kale Bread

Experience some of your favorite Mediterranean flavors with our recipe for Mediterranean Kale Bread. This moist, homemade bread is full of the flavorful tastes of olive oil and feta cheese, making it a super company-fancy choice for your bread basket.
What You'll Need
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 2 1/2 cups shredded kale
- 1 cup crumbled feta cheese
- 1/2 cup olive oil
- 2 eggs
- 3/4 cup plain Greek yogurt
- 3/4 cup milk
- 1/4 cup chopped walnuts
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
- In a large bowl, combine flour, baking powder, garlic, and salt. Add kale and feta cheese; stir.
- In a medium bowl, whisk oil, eggs, yogurt, and milk. Pour into dry ingredients and mix until well combined. Pour batter into loaf pan and sprinkle with walnuts.
- Bake 45 to 50 minutes, or until a toothpick inserted in center comes out dry. Let sit 10 minutes, then remove to a wire rack to cool completely.

I am not a professional baker, but have baked breads for 50 years. All kinds of European, middle eastern etc. I have made this bread 3 times. Once by your directions which came out awful dry, no taste. 2nd round I made changes to increase seasonings and moisture, not a great improvement but could toast the 2nd one and use butter. Still not something I would recommend. 3rd time took out half the kale, cut baking powder in half, kept moisture levels up and added almond extract for flavor. OK as bread, but still not something I would share with others. So I am done with this, recommend you pull recipe down . Others feel great waste of time money and effort. This recipe is not encouraging, and a bad reflection on the website.

Bit confused..most comments say this bread is moist, except one lady said it was dry and crumbly. Who is right? Did she leave something out? Anxious to try it!

I made this and was very disappointed. The bread was dry and crumbly. The feta cheese made it more dry. It needed more moisture. More milk, more yogurt. more oil. It is currently sitting on my kitchen table wrapped in foil. I will throw it away soon. I did not like it!

I loved it! My hubby not so much. I think it would be excellent served as drop biscuits, as the tops would be very crunchy, and nicely browned. I might add some onions. Oh yeah, I used a bag (not the whole bag) of baby spinach and kale.

Do I need to store the bread in the fridge since it has Feta cheese?

There is no need to refrigerate the bread, however if it makes you more comfortable you certainly can. Just make sure you heat it up before serving so it's extra yummy!

This is a great way to incorporate some kale into your diet. Plus, the bread is so moist and delightful. If you try this, trust me you won't be disappointed. I shared it with family and friends and everyone was fighting for the last slice.
