Pumpkin Raisin Muffins

I shave time from making traditional pumpkin bread by using a boxed bread mix and a can of pumpkin pie filling. What could be easier? I just stir together four simple ingredients, pour into muffin pans, and bake. It's easy as 1-2-3!!
What You'll Need
- 2 (15.4-ounce) packages nut bread mix
- 1 1/4 cup golden raisins
- 2 large eggs, lightly beaten
- 1 (30-ounce) can pumpkin pie filling
What to Do
- Preheat the oven to 400 degrees. Combine bread mix and raisins in a large bowl; make a well in center of mixture.
- Combine eggs and pie filings; add to dry ingredients, stirring just until dry ingredients are moistened. Place paper baking cups in muffin pans; spoon batter into cups, filling two-thirds full.
- Bake 15 to 20 minutes. Remove from pans immediately, and cool on wire racks.
