This Americana classic first made its way across the South before making its way across the country. Once you give this Spoon Bread a try, we're sure it will make its way around your circle of friends and family, too.

What You'll Need

  • 2 cups milk
  • 1 1/2 cup water
  • 1 1/2 cup fine yellow cornmeal
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 1 1/4 teaspoon salt
  • 5 eggs
  • 1 tablespoon baking powder

What to Do

  1. Preheat the oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
     
  2. In a medium saucepan over medium-low heat, combine milk and water; simmer until hot, stirring occasionally.
     
  3. Add cornmeal, butter, sugar, and salt; stir 1 to 2 minutes or until mixture is thickened. Remove from heat.
     
  4. In a medium bowl, beat eggs and baking powder until very light and fluffy. Stir in cornmeal mixture; mix well then spoon into baking dish.
     
  5. Bake 45 to 50 minutes or until top is golden. Serve hot.

Is this easily reduced in serving size? I am a single and 9 servings is a lot to make for one person. I would like to make this but as I said, it is a lot for one.

Yes, you can cut this recipe in half, but you would need to bake it in a 4- x 8-inch loaf pan, or a smaller baking dish, rather than an 8-inch square dish. Enjoy!

ok, I think the Title is a bit misleading...other than the spoon you use to "spoon into baking dish" I don't see where the spoon comes in. This looks like another recipe for Cornbread.

Look at the amount of liquid in the recipe. It is indeed for something that you will need a spoon for dishing out. It's not as dense or solid as corn bread. The title matches the recipe. I guess you've never heard of spoon bread before.

It's true. You must make it to see it is NOT cornbread. Spoon Breads are delicious. I cannot understand why some rate a recipe based on the changes they made. Or comment without trying the recipe as it is posted. Just saying.
