What You'll Need
- 1 (3- to 4-pound) chicken, cut into 8 pieces
- 2 tablespoons butter or margarine
- 1/2 cup chopped onion
- 1 garlic clove, crushed
- 1 (8-ounce) can tomato sauce
- 3/4 cup chicken broth
- 1/2 cup stuffed green olives, drained and sliced
- 1/4 cup light raisins
- 1 tablespoon white vinegar
- 1/4 teaspoon chili powder
- 1/4 teaspoon allspice
- 1 green bell pepper, cut into strips
What to Do
- In a large skillet, brown the chicken in butter. Remove chicken; set aside. Add onion and garlic to skillet, cook until lightly browned.
- Stir in tomato sauce, chicken broth, olives, raisins, vinegar, chili powder, and allspice.
- Return chicken to skillet; spoon sauce over chicken, cover and simmer for 30 minutes. Add the green pepper; cover and cook for 10 minutes more or until chicken is fork-tender and no pink is showing.
Notes
Serve over hot cooked rice. Dark raisins, bottled garlic, or stuffed olive pieces will work just as well.
