Fast and lean Fast Chicken is a quick-cooking lower-in-fat, chicken dish that is packed with flavor. Get it on the table fast and linger to enjoy all the good taste.
What You'll Need
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 1 cup grated Parmesan cheese
- 1/2 cup biscuit baking mix
- 1/4 teaspoon pepper
- 6 boneless, skinless chicken breast cutlet halves, slightly flattened
- 2 tablespoons butter
What to Do

In a small bowl, mix the oil and lemon juice. In a shallow bowl, mix the cheese, biscuit mix, and pepper. Dip the chicken in the oil mixture, then coat with the cheese mixture.

In a large skillet, heat the butter over medium heat until hot. Saute the chicken in batches until golden and no longer pink, about 3 to 5 minutes on each side.
Notes
How about serving it with Russian dressing or sauteed mushrooms? Your can use turkey cutlets instead of chicken breasts, they're even "faster" 'cause they don't have to be flattened.
