Cracker Omelet

When crackers are soaked in an egg mixture and then cooked, they take on a rather fluffy consistency that makes for a surprisingly pleasant omelet. Our Cracker Omelet has all that great egg-y flavor, with a touch more puffiness. It's a must try!
What You'll Need
- 8 eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 22 saltine crackers, coarsely broken
- 1 tablespoon butter or margarine
What to Do
- In a large bowl, whisk together eggs, milk, salt, and pepper. Add crackers and allow to soak 6 to 8 minutes.
- In a large skillet, melt butter over medium heat; add egg and cracker mixture. As mixture begins to set, push it slightly toward center so that liquid runs to the edges of skillet. Allow omelet to cook for 5 to 6 minutes or until lightly brown on bottom.
- Slide omelet out of pan onto a large plate. Invert skillet over the omelet on plate and turn whole omelet over so that the uncooked side is face-down in skillet. Cook an additional 3 to 4 minutes or until center is set and inside is firm.
Notes
Serve with strawberry preserves or maple syrup.

I made this for breakfast this morning. It would not slide out of the pan and I even used a non stick pan and followed the directions exactly. I also found it rather dry. It did have good taste however.

Where is a picture of this dish? It sounds interesting, but I would like to see what it is that I am making. Pictures for all recipes go a long way when it comes to wanting to make said recipe.

Excellent. I cut in half for two and it was more than enough. Somewhat surprisingly to me, it was good with syrup. But, topping (or cooking in pan before adding the egg mix) with sauteed onions, peppers, mushrooms, ham, etc would give an entirely different take on this easy dish. Two suggestions: use a nonstick skillet and I think you can leave out or reduce salt if using full salt saltines.

There's nothing in this "omelet" but eggs, milk, crackers, and seasoning! Where's the meat and diced veggies? I wouldn't call it an omelet or French Toast or Quiche. I don't know WHAT it is, but it seems unfinished!

There is a suggestion in the note to top is with strawberry preserves or maple syrup. I would think you could use this as a base and add whatever you want in it or top it off with crumbled, cooked bacon, onion, cheese.. the possibilities are endless. Be creative!
