Crispy Fish 'n' Chips

Nope, our Crispy Fish 'n' Chips isn't the traditional English-style fish and chips. This time we're gonna do things a little different by rolling the fish in potato chips then baking it till it's extra crispy.
What You'll Need
- 1 (5 ½-ounce) package salt-and-vinegar-flavored potato chips, crushed
- 1 teaspoon chopped fresh parsley
- 1/4 teaspoon black pepper
- 1 1/2 pound fresh or frozen white-fleshed fish fillets, such as cod, haddock, or whiting, thawed if frozen
- 1/2 stick (1/4 cup) butter, melted
What to Do
- Preheat oven to 425 degrees F. Coat baking sheet with cooking spray.
- In a shallow dish, combine crushed potato chips, parsley, and pepper; mix well.
- Brush both sides of fish with melted butter then coat with potato chip mixture. Place on baking sheet and bake 15 to 20 minutes, or until fish flakes easily with a fork. Serve immediately.

Thanks for the mayo tip gcbarn, it worked great. I was feeling a little creative and also added just a little creole seasoning to give the haddock a slight kick. The mayo held everything together great and there wasn't any leftovers :(. We definitely will be making this recipe again.

suggestion, I rub my fish, or chicken or pork lightly with hellmann's mayo first than coat them in the finely crushed chips what ever kind you like and it turns out super it's better than butter and less fat. try it you will like it make it all the time

Hi There, I can't say what I think about the taste of the fish 'n' chips I didn't get that far. I don't know what I did wrong but I could never get the potato chips to say on the fish. I even rolled the fish in the butter instead of brushing it on and the potato chips would not say on the fish. Any ideas on how to correct this? I would like to try it! Thanks
