Mediterranean Fish Fillets over Rice

What You'll Need
- 4 (6-ounce) frozen firm white fish fillets, thawed (see note)
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 tablespoon olive oil
- 1 (14-1/2-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
- 1/2 cup pitted kalamata olives, halved
- 2 tablespoons lemon juice
- 1 teaspoon prepared minced garlic
- Warm cooked rice
What to Do
- Pat fish fillets dry with paper towels, sprinkle with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add fish; cook 3 to 4 minutes on each side or until browned.
- Add tomatoes and next 3 ingredients to skillet. Cover, reduced heat, and simmer 9 to 10 minutes or until fish flakes easily with a fork. Serve fish and tomato mixture over warm rice.
Notes
Any firm white fish fillets, such as orange roughy, grouper, or red snapper, will work well in this Mediterranean-inspired dish. And if you have feta or Parmesan cheese on hand, sprinkle it over the fish before serving.
