Spinach Salad with Hot Bacon Dressing

What You'll Need
- 8 slices bacon, chopped
- 1/4 cup apple cider vinegar
- 2 teaspoons fresh lemon juice
- 2 tablespoons sugar
- 1/4 teaspoon black pepper
- 1 (10-ounce) package fresh spinach, trimmed
- 1 hard-boiled egg, chopped
What to Do
- In a large skillet, cook the bacon over medium-high heat until crisp. Add the vinegar, lemon juice, sugar, and pepper; mix well.
- Place the spinach in a serving bowl; add the hot bacon dressing and toss to coat. Sprinkle with the egg and serve immediately.

I don't think you are supposed to cook the spinach. You just pour the hot dressing over the top of the spinach, toss in a bowl and it wilts a little

I partially froze then chopped the bacon before cooking it. I find it much easier.

My husband also LOVES this salad and it is very hard to find in restaurants. Glad I will be able to make it at home now. Due to medications I am unable to eat but I'm sure we'll have no problem getting rid of it.

Wow - One taste and my entire family was in love. Be sure, if at all possible, to use freshly grated black pepper. Adding some thinly-sliced (you could read a newspaper through it) red onion and buttered garlic croutons didn't hurt my family's feelings a bit. Next time I have to kill time before the entree, though, I think I'll take out the bacon before adding the liquids, and keep it until serving time, so I can crumble it over the top. (Hmm...I wonder how crumbling it with some shaved parmesan or bleu or feta cheese might add to the mix?)
