I use lime juice concentrate (from a bottle limes are too expensive, and my arthritic hands don't like juicing them.) Easy, delicious, and always gets rave reviews!

The filling was delicious but needs to be firmer for slicing. Any Suggestions? I used lite whipped topping to cut calories and a shortbread crust which I prefer. I will definitely make this again but was shocked when I calculated the calories.

A bit of dissolved gelatin would certainly firm it up. You shouldn't need much. Or try it with regular whipped topping and see if the additional fat content makes a difference. We tried this and found it more than a little overly sweet, and had much better luck with both flavor and texture by replacing the whipped topping with unsweetened whipped cream. The filling still has more than enough sweetness from the juice concentrate and milk, and you have much better/wider control over firmness with whipped cream. The only (very minor) issue we've had with this recipe is finding 6 oz cans of frozen juice concentrate. They're not carried by any of our local markets.

Yes, you can certainly make a crust from scratch. If you prefer not to use limeade concentrate, we would suggest either lemonade or orange juice concentrate. You need the acid from to thicken the recipe. Enjoy!
