Chopstick Veggie Fried Rice

No need to pick up Chinese take-out when it's easy as can be to make some of our favorites, like vegetable fried rice! Our Chopstick Veggie Fried Rice can go from your skillet to your table in just minutes. It's loaded with veggies and you can add any type of protien you like best. Save on take-out and have perfect fried rice at home!
What You'll Need
- 2 tablespoons plus 2 teaspoons vegetable oil, divided
- 2 eggs, lightly beaten
- 2 cloves garlic, minced
- 1 (16-ounce) package frozen peas and carrots, thawed
- 3 cups cold cooked rice
- 1/4 cup soy sauce
What to Do
- In a large skillet over medium-high heat, heat 2 teaspoons vegetable oil. Add eggs and scramble, then break up scrambled eggs into small pieces. Remove from skillet and set aside.
- Heat the remaining 2 tablespoons oil in skillet; add garlic, peas and carrots and cook 3 minutes. Add rice and soy sauce and cook 3 to 5 minutes or until heated through, stirring frequently. Stir in scrambled egg pieces and cook 1 to 2 additional minutes, or until heated through. Serve immediately.

This really is Ooh So Good! It can be either a main dish or a side dish, delicious and healthy either way. It was so easy to make but my house smelled like I cooked a gourmet dinner with the aroma of the sauted fresh garlic!

I love how simple this fried recipe is, since you can use frozen veggies and don't have to spend a ton of time in the kitchen chopping vegetables. It comes together very quickly. Since I don't cook a great deal of rice, and hence do not have a bunch of leftover rice in my fridge, I make the rice the night before. Then I stick it in the fridge overnight once it has cooled down. I agree that substituting brown rice makes the dish even more nutritious. It is a great way to use up odds and ends veggies that are leftover in your fridge!

I am glad that Mr. Food put this recipe in because I love it. It is expensive to buy it in the frozen section or a Deli, especially when you have a family that likes it to. Thank you Mr. Food.

This recipe is quick and easy. I will often add left-over cooked chicken. I also use "low sodium" soy sauce and I use a little less than stated (my family finds it too salty otherwise). Much better than restaurant fried rice. Thanks for posting this.

These are all great recipes. Also, reading the comments, I thought they must have been from 2004. I was shocked to see how recent they were. I think the recently-viewed feature is great. I didn't even know that people still printed out stuff off the internet. What a waste of time/paper when you can pull the recipe up on your phone or laptop. Sorry that these people are so computer-illiterate! I really loved this batch of recipes (especially the honey chicken, which i easily made into honey tofu, and the lo mein) and I think you should do more restaurant food at home type stuff! For this grouping of recipes, my only suggestions would be to add general tso's chicken and egg rolls... are there easy ways to make those? I haven't found them yet.

Perhaps you are not aware that not everyone has access to smart phones and laptops. I am elderly and live in a rural area where reception is not optimal for these devices, as well as not within my limited budget. You might want to be a little more tolerant of people who are not into your "computer literate" category.

I have a Great Idea! A lot of people may like to see the Picture. I also agree and understand that we should save paper and ink. What I do when I need to Print a Recipe. That has advertisements or a recipe picture. I Look for An ENVELOPE which usually means that you or another person can E-Mail it to their e-mail address. And most os the time. It is without pictures/ads. Hope this was helpful :) Happy Holiday's to all.

I happen to like the "Recently Viewed Recipes" feature, it helps me if i need to go back to a recipe that I might not have saved or printed the first time i viewed it and don't remember the exact name of it, PLEASE KEEP IT.

I don't care for the new feature "recently viewed recipes" at all. I don't care what I have looked at recently. I add to my recipe box if I think I will make a recipe. Thanks for letting me state my opinion.

Please discontinue the Recently Viewed Recipes, which automatically get printed on second page, unless you manipulate your computer to use only one page. By the time you became aware of this second page, a waste of paper and ink is done. Leave this printing simple and easy as in the past. Thank you. As usual, your recipes are so good.

OMG, sewshats 8660791, all you have to do is when you hit print and your screen comes up (the grey one to hit print on) just put in "number of pages, 1" and it will only print the recipe on one page. Good grief, get a life! Although I'm sure Mr Food's kitchen won't miss a gripe like you. LOL

Yesterday and today I wanted to print out the recipes and was very angry to find out the resently viewed pictures of dishes also printed out. This made the printer use two sheets of paper to print out the wanted recipes. I don't like wasting paper. I want to print out two recipes on one sheet of paper. If you don't fix this I will be forced to stop looking at your website for recipes. That would be a great shame. Please fix this junk I don't want on my recipe print outs. Thank you.

I am unable to eat rice so I will not be able to try this recipe, BUT so often, I hear comments about not being able to print the recipe.. I copy and paste into Microsoft Word, I then change it over the way I like my recipes . Now you can either save it to your computer or PRINT IT..

I saw this recipe TODAY and made it for dinner TONIGHT. Boy, I'm glad I did - it was delicious! I used scallions, snap peas and chopped orange peppers, because that's what I had. I also added a rounded teaspoonful of jarred minced garlic to the veggies. And I used brown rice, because we don't eat white rice. Wow, I will definitely make THIS again. SO yummy! But next time, I'd use ONE tsp. of oil to cook the eggs...

Concerning the eggs, save time and do it like the Chinese cooks do it. After adding the rice, break the eggs over the rice and stir. Veggie suggestions: Try snow peas or sugar peas with grated carrots and sliced green onions. Be careful with your veggies as it is easy to overcook them. Remember, you want them slightly crisp.
