Perfect Poutine

It's salty, it's crunchy, it's cheesy, and yes, it's messy... What is it? Poutine! Poutine is a dish that comes from Canada and basically consists of french fries, cheese curds, and gravy. If you haven't tried it yet, our recipe for Perfect Poutine is the perfect place to start!
What You'll Need
- 1 (32-ounce) package frozen French fries
- 1/2 stick butter
- 1/4 cup all-purpose flour
- 1 3/4 cup beef broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon browning sauce
- 1 1/2 cup cheddar cheese curds
What to Do
- Bake French fries according to package directions.
- Meanwhile, in a medium saucepan over medium heat, melt butter. Add flour and whisk until smooth. Slowly whisk in broth, salt, and pepper; continue stirring until mixture comes to a boil and has thickened. Stir in browning sauce.
- Place French fries on a platter, top with cheese curds and drizzle with gravy. Serve immediately.

I spend the summer in southern Ontario. When I lived in south Jersey I couldn't find cheese curds. I used shredded mozzarella. It was passable, but not nearly as good as the real curds. Now I live in upstate NY and can get curds locally...yum...

A cheese curd isn't a special kind of cheese. It's just a young cheddar, one that hasn't been aged at all. These curds are separated from the whey during the cheesemaking process, and instead of being molded for a future cheese wheel, they're sliced up and bagged to be sold right away.

Cheese curds are basically an Up north food here in Northern Wisconsin we love them battered and deep fried all the restaurants bars and cafes have them we also buy them in 1 and 2 lb bags at our grocery stores they are delicious in both white cheese and cheddar cheese

Perfect poutine, not quite, but it does look good. I am Canadian, and I LOVE poutine. Frozen fries are used in restaurants that are trying to save time. If you want good poutine, use hand cut, never frozen French fries (fried or baked, your choice). Your taste buds will thank you for it. Make sure your gravy is hot enough to melt the cheese curds.
